Method

Crust Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

  2. 2

    Add Ice Water

Slowly add the ice water, mixing until the dough comes together. Do not overmix.

  3. 3

    Chill the Dough

Divide the dough into two halves, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

  1. 4

    Prepare the Fruit

Wash and slice the fresh fruit into bite-sized pieces. Place the fruit in a large bowl.

  2. 5

    Mix Filling Ingredients

Add the granulated sugar, cornstarch, lemon juice, cinnamon, nutmeg, and vanilla extract to the fruit. Toss gently to coat the fruit evenly.

Assembling the Pie

  1. 6

    Roll Out the Dough

On a lightly floured surface, roll out one disc of chilled dough to fit a 16-inch pie pan. Carefully transfer it to the pan.

  2. 7

    Add the Filling

Pour the prepared fruit filling into the pie crust, spreading it evenly.

  3. 8

    Top with Second Crust

Roll out the second disc of dough and place over the filling. Seal the edges by crimping with your fingers or a fork. Cut small slits in the top crust for steam to escape.

  4. 9

    Bake the Pie

Preheat the oven to 425°F (220°C). Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.

  5. 10

    Cool and Serve

Allow the pie to cool for at least 15 minutes before slicing. Serve warm or at room temperature, optionally topped with whipped cream and mint leaves.
