    Trim broccoli rabe: cut off 1/2–1 inch of the tough stem ends and discard. If stems are thick, halve them lengthwise so all pieces cook evenly. Rinse thoroughly under cold water to remove grit and shake or spin dry.

    Measure and prepare garlic (thin slices), toast nuts (if using) in a small dry skillet over medium heat for 2–4 minutes until fragrant and lightly golden, then set aside.

Blanching (removes bitterness and speeds sauté)

    Bring water to a boil

    Bring a large pot of salted water (about 4–6 quarts) to a rolling boil. Use about 1 tbsp salt per 4 quarts of water.

    Blanch broccoli rabe for 1½–3 minutes, depending on stalk thickness: cook until stems are bright green and just tender (they should still have a slight bite).

    Immediately transfer the broccoli rabe to a large bowl of ice water to stop cooking. Once cool, drain thoroughly and squeeze gently to remove excess water; roughly chop into 2–3 inch lengths if not already.

Sauté

    Heat a large skillet or sauté pan over medium heat. Add 3 tbsp extra-virgin olive oil and let warm until shimmering but not smoking (about 1 minute).

    Add the sliced garlic and crushed red pepper flakes to the oil. Cook, stirring frequently, for 1–1½ minutes until the garlic is fragrant and just beginning to turn light golden. Watch carefully to avoid burning.

    Add the blanched, drained broccoli rabe to the skillet. Increase heat to medium-high if needed to evaporate excess moisture. Toss or stir to coat the greens in the garlic oil and distribute evenly.

    Sauté for 3–5 minutes, stirring occasionally, until stems are tender and leaves are wilted. If pan looks dry, add up to 1 tbsp more olive oil.

    Season with 1¼ tsp kosher salt and ½ tsp freshly ground black pepper, tasting and adjusting salt as desired.

    Remove from heat and stir in 1 tbsp fresh lemon juice to brighten the flavors.

Finish & serve

    Transfer sautéed broccoli rabe to a serving dish. If using, sprinkle toasted pine nuts or sliced almonds and 2 tbsp grated Parmesan or Pecorino over the top.

    Serve hot or warm as a side dish with roasted meats, pasta, or polenta. Leftovers keep refrigerated up to 3 days; reheat gently in a skillet with a splash of water or oil.
