Prepare glass
Select a rocks or Old Fashioned glass. Fill the glass with 2–3 large ice cubes to properly chill and slightly dilute the drink as you build it.

Add aperol and vermouth
Measure and pour 1 oz Aperol and 1 oz sweet (rosso) vermouth directly over the ice in the glass.

Top with prosecco and sparkling water
Gently pour 1 oz chilled Prosecco into the glass. Follow with 0.5 oz chilled house sparkling water to open the drink and add a light effervescence. Pour gently to preserve bubbles.

Stir gently
Using a bar spoon, give the drink 4–6 slow, gentle turns to combine ingredients without flattening the Prosecco.

Garnish and serve
Express the oils from an orange peel over the drink by holding the peel skin-side down and giving it a quick twist about 3 inches above the glass, then drop the peel into the cocktail as a garnish. Serve immediately.
