    Chill glass

    Place a highball or Collins glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail to chill it.

    If using whole fresh ginger or crystallized ginger for garnish, have it ready. Slice the apple thinly and cut a lemon wheel.

Build the cocktail

    Combine base ingredients

    In a cocktail shaker, add 2 oz Bulleit Bourbon, 3 oz fresh apple cider, 0.5 oz fresh lemon juice, and 0.25 oz simple syrup (omit the syrup if your cider is very sweet). Add 2 dashes of Angostura bitters if using.

    Add ice and shake

    Fill the shaker halfway with ice (about 4–6 large cubes), secure the lid, and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

    Prepare glass and strain

    Discard the chilling ice or water from your glass and fill it with fresh ice (crushed or cubes, about 1 cup). Strain the shaken mixture over the ice into the glass using a Hawthorne or fine strainer.

    Top with ginger beer

    Gently top the drink with 3 oz chilled ginger beer. Stir once gently with a bar spoon to integrate the ginger beer without flattening the fizz.

Garnish & serve

    Float an apple slice and a lemon wheel on the surface or thread them on a cocktail pick. Add a piece of crystallized ginger on the rim or skewer for an extra spicy-sweet note.

    Serve immediately with a straw if desired. Advise guests to give the drink a gentle stir before sipping to reincorporate the layers.
