Heat water
Bring fresh, filtered water to a gentle near-boil around 200°F (just off the boil). If you don't have a thermometer, bring to a rolling boil then let sit 30 seconds.

Warm teaware (optional)
Pour a small amount of the hot water into your teapot or cup, swirl and discard. Warming the vessel helps maintain brewing temperature.

Add water
Pour 8 oz (about 1 cup) of the hot water over the tea, ensuring the leaves are fully submerged and can expand.

Steep
Steep for 3 to 4 minutes. For a lighter cup, steep 3 minutes; for a fuller flavor, steep 4 minutes. Avoid steeping longer than 5 minutes to prevent bitterness.

Strain
Remove the infuser or strain the tea leaves into your cup to stop the infusion.

If making multiple servings, use 2 tsp tea and 8 oz water per cup and adjust steeping time the same way. Decaf Earl Grey can also be brewed stronger and chilled for iced tea—double the leaves, steep 4 minutes, cool, then pour over ice.
