Salad

Method

Blue Cheese Dressing

  1. 1

    Combine base

In a medium bowl, whisk together 1/2 cup mayonnaise and 1/4 cup sour cream until smooth.

  2. 2

    Add liquids and seasonings

Whisk in 1/4 cup buttermilk, 1/2 tablespoon lemon juice, 1/2 teaspoon white wine vinegar, 1/4 teaspoon minced garlic, 1/4 teaspoon Worcestershire sauce, 1/8 teaspoon salt, and 1/8 teaspoon black pepper until combined.

  3. 3

Fold in cheese and adjust consistency

Stir in 1 ounce crumbled blue cheese, reserving a small pinch for garnish. If the dressing is too thick, add up to 1-2 tablespoons additional buttermilk to reach desired pourable consistency. Taste and adjust salt/pepper as needed.

  4. 4

    Chill

Cover and refrigerate the dressing at least 20 minutes to let flavors meld. Can be made up to 24 hours ahead; stir before serving.

Salad

  1. 5

    Prepare bacon

Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if available. Arrange 4 bacon strips on rack and bake 12–18 minutes until crisp to your liking. Remove and transfer to a paper-towel-lined plate to drain, then crumble or chop into bite-sized pieces.

  2. 6

    Prepare vegetables

While bacon cooks, remove any loose outer leaves from 1 head iceberg lettuce. Quarter the head through the core to form 4 wedges (leave core intact to hold wedges together). Pat wedges dry with a clean kitchen towel or paper towels to help dressing adhere. Halve 12 cherry tomatoes (or quarter if large) and thinly slice 1/4 red onion into rings. Separate onion slices into rings or half-rings.

  3. 7

    Season wedges

Place each wedge on individual plates or a shared platter. Sprinkle wedges lightly with a pinch (about 1/16–1/8 tsp) of coarse salt and freshly ground black pepper (totaling about 1/4 tsp combined across all wedges).

  4. 8

    Assemble salad

Spoon or drizzle desired amount of chilled blue cheese dressing over each wedge (about 2–3 tablespoons per wedge). Scatter halved cherry tomatoes, sliced red onion, crumbled bacon pieces, and 3 ounces total blue cheese crumbles evenly over the wedges.

  5. 9

    Garnish and serve

Sprinkle chopped fresh chives (1 tablespoon) and the reserved pinch of blue cheese over the top. Serve immediately so bacon remains crisp. Provide extra dressing on the side if desired.
