    Preheat the oven to 425°F (220°C). Line two rimmed baking sheets with parchment paper or lightly oil them to prevent sticking. This higher temperature helps caramelize the sweet potatoes for party service.

    Cut and dry

    Peel (optional) and cut 6 medium sweet potatoes into uniform 1-inch cubes. Pat the cubes very dry with clean kitchen towels or paper towels — removing surface moisture helps achieve browning and crisp edges.

    Season

    In a large mixing bowl, combine 4 tbs extra-virgin olive oil, 2 tsp kosher salt, 1 tsp freshly ground black pepper, 1 tsp smoked paprika, 1 tsp garlic powder, and 2 tbs finely chopped fresh rosemary (or 1 tsp dried). Add the sweet potato cubes and toss thoroughly until each piece is evenly coated.

    Arrange on sheet pans

    Spread the seasoned sweet potatoes in a single layer across the prepared baking sheets, leaving space between pieces. Crowding causes steaming rather than roasting; use two pans if necessary so cubes are not touching much.

    Roast

    Roast in the preheated oven for 25–30 minutes, rotating the pans front-to-back and flipping the pieces halfway through (around 12–15 minutes). Roast until the edges are caramelized and the centers are tender when pierced with a fork.

    Optional glaze

    If using maple syrup, remove pans from oven with about 5 minutes remaining. Drizzle 2 tbs maple syrup evenly over the sweet potatoes, toss gently on the pan to coat, and return to the oven for the final 3–5 minutes to set a glossy glaze.

    When roasted, transfer the sweet potatoes to a large serving tray. Sprinkle with 1 tbs fresh lemon juice or apple cider vinegar and toss gently to brighten flavors. Scatter 2 tbs chopped fresh parsley and 1/2 cup toasted pumpkin seeds or chopped toasted pecans if using.

    For a plated or buffet presentation, dollop creamy yogurt or labneh (1 cup) onto the serving platter or arrange in a small bowl alongside. Optionally sprinkle 3/4 cup crumbled feta or goat cheese over or beside the roasted sweet potatoes for a savory contrast.

    Serve warm. If preparing ahead for a catered party, roast the sweet potatoes fully, cool slightly, then hold in a 200°F (95°C) oven covered for up to 60 minutes. Reheat briefly at 400°F (200°C) for 6–8 minutes if needed to refresh the edges before serving.
