Preheat and prepare
Preheat the oven to 400°F (200°C). Pat the turkey breast dry with paper towels and place it on a rimmed baking sheet or in a shallow roasting pan lined with foil.

Make herb butter and season
In a small bowl, combine the softened butter, olive oil, thyme, garlic powder, smoked paprika, salt, and black pepper. Rub the mixture evenly over the turkey breast, getting under any loose skin if present to flavor the meat beneath.

Roast turkey
Roast the turkey breast in the preheated oven for 20 minutes, then reduce the oven temperature to 350°F (175°C) and continue roasting until an instant-read thermometer inserted into the thickest part registers 160°F (about 20–30 more minutes depending on thickness). Total roast time should be about 40–50 minutes for a 2 lb breast. Baste once with pan juices halfway through the lower temperature phase.

Rest
Remove the turkey from the oven and tent loosely with foil. Let rest for 10–15 minutes; the internal temperature will rise to 165°F and the juices will redistribute, making slicing easier.

Slice turkey
After resting, slice the turkey breast into 1/4-inch to 1/2-inch thick slices against the grain.

Melt cheese (if desired)
If you want melted cheese on the turkey sandwiches: arrange turkey slices on a baking sheet or ovenproof platter, top with chosen cheese slices, and place under a broiler for 1–2 minutes until the cheese is melted and slightly bubbly. Watch closely to prevent burning.

Prepare toppings
If using caramelized onions, spread them thinly on rolls. If using arugula or spinach, toss lightly with a pinch of salt and a squeeze of lemon. Have cranberry relish ready in a small bowl for spreading or drizzling.

Toast bread (optional)
Lightly toast artisan rolls or slices of baguette for texture and to help prevent sogginess from condiments.

Assemble sandwiches / plates
Spread mayonnaise or mustard on the cut sides of the bread if using. Layer 3–4 slices of turkey per sandwich, add the chosen cheese (melted or cold), then top with caramelized onions, a small handful of arugula or spinach, and a spoonful of cranberry relish if you like a sweet-tart contrast.

Serve
Serve the gourmet turkey sandwiches warm or at room temperature with lemon wedges on the side for those who want a bright squeeze of citrus. Leftover sliced turkey can be refrigerated for 3–4 days.
