Prepare spread and bread

Mix spread
In a small bowl, combine the Dijon mustard and mayonnaise until smooth. Taste and adjust — add a pinch of black pepper if desired.

Butter one side of each bread slice evenly with the softened unsalted butter. The buttered sides will be the exterior that contacts the pan for toasting.
Assemble sandwich

Place the two unbuttered sides of the bread down on a clean work surface. Spread the Dijon-mayo mixture evenly over each unbuttered side.

On one slice, layer the smoked turkey evenly (about 4 oz). Arrange the Swiss cheese slices on top of the turkey so they cover most of the surface.

If using, add tomato slices and a leaf of lettuce on top of the cheese. Sprinkle the exposed tomato with a light grind of black pepper (use the measured tsp across the sandwich as needed).

Close the sandwich with the second slice of bread, buttered side facing out.
Cook / toast sandwich

Cook 3–4 minutes on the first side until golden brown. Carefully flip the sandwich with a spatula and cook another 2–3 minutes until the second side is golden and the Swiss cheese is melted. If the bread browns too quickly before cheese melts, lower the heat and cover the pan for 1–2 minutes to trap heat and finish melting.

Remove the sandwich from the skillet and let rest 1 minute. This helps the cheese set slightly and prevents immediate sliding when cut.

Using a sharp knife, cut the sandwich in half diagonally. Serve with pickles or chips if desired.
