    Prepare glaze and warm ham

    Preheat oven to 350°F (175°C). Line a baking sheet with foil. In a small bowl whisk together brown sugar, Dijon mustard, maple syrup, and black pepper until smooth.

    Arrange the sliced ham in a single layer on the prepared baking sheet. Brush half of the glaze over the top of the ham slices, reserving the remainder for later. Cover loosely with foil.

    Warm in the oven for 8–10 minutes, until ham is heated through. Remove foil, brush the remaining glaze over the ham, and return to the oven for 2–3 minutes to set the glaze and caramelize slightly. Remove from oven and let rest 2 minutes.

Cheese and Assembly

    Prepare bread (if using)

    If serving on rolls or sliced sourdough, split or slice and lightly butter the cut sides. Toast briefly under broiler or in a skillet until lightly golden, about 1–2 minutes per side. Keep warm.

    Melt cheese over warm ham

    Arrange warm glazed ham slices on an oven-safe platter or on the toasted bread. Top each portion of ham with a slice or two (about 1 oz each) of your chosen cheese. Place under a preheated broiler for 1–2 minutes, watching closely, until cheese just melts and begins to bubble. Alternatively, cover with a lid or place in a 350°F (175°C) oven for 3–4 minutes to melt the cheese.

    If assembling sandwiches, place melted-cheese ham between rolls or on bread. Add optional pickles or cornichons for brightness.

    Scatter fresh thyme over the plated ham or sandwiches and sprinkle with coarse sea salt to taste. Serve immediately.
