Prepare Cheeses

Temper and slice cheeses
Remove all cheeses from the refrigerator 30–45 minutes before serving so they come to room temperature — this enhances flavor and texture.

Cut the block cheddar into 1/4-inch slices and/or 1/2-inch cubes for easy picking. Slice the Gouda into 1/4-inch pieces or small wedges. For Brie, leave the wheel whole or halved and score the top lightly; provide a soft cheese knife. Crumble the blue cheese into a small pile or place in a small bowl. Break the goat cheese log into 1-inch rounds or leave whole with a small spreader.

Arrange crackers on the board in small stacks or fan shapes, keeping different cracker types separated to avoid flavor mingling.

If using a baguette, slice on a slight diagonal 1/4-inch thick and toast in a 375°F (190°C) oven for 6–8 minutes until just crisp. Let cool.

Spoon Dijon mustard and whole grain mustard into separate small bowls. Put fig jam and honey into additional bowls. Place mixed olives in another small bowl. Place roasted nuts in a small pile or bowl.

Wash and dry grapes; keep them on small stems if possible and place as a small bunch on the board. Core and thinly slice the apple or pear and toss lightly in a bowl with a few drops of lemon juice to prevent browning, if not serving immediately.
Assemble Tray

Select a large wooden board or platter as the base. Begin by placing bowls (mustards, jam, honey, olives) spaced across the board to create anchors.

Fan crackers and toasted baguette slices in groups around the cheeses, leaving small gaps for fruit and nuts. Place grapes and apple/pear slices in the gaps to add color and contrast.

Scatter roasted nuts near the cheeses and tuck the bowl of olives where it balances the board visually. Add small sprigs of rosemary or thyme as garnish for a finished, fragrant look.

Label cheeses if serving to guests (small cards, toothpicks, or a chalkboard). Provide a cheese knife or spreader for each cheese style (firm, semi-firm, soft, crumbly).

Serve immediately once assembled. Keep extra crackers in their box or in a covered container to maintain crispness.

Leftover cheeses should be wrapped in wax paper or parchment and refrigerated. Consume within 5–7 days depending on the cheese. Jams, mustards, olives and nuts can be refrigerated and used within 1–2 weeks.
