    Reheat and finish roast chicken

    Preheat oven to 350°F (175°C). Place sliced cooked roast chicken in shallow hotel pans, drizzle 2 tbsp olive oil per pan and season with 1 tsp salt and 1/2 tsp pepper per pan. Cover tightly with foil and heat for 20–25 minutes until warmed through (internal temp 165°F/74°C). Remove foil last 5 minutes to restore surface texture. Transfer to serving pans and garnish with half of chopped parsley.

    Reheat roast beef

    Preheat oven to 325°F (160°C). Arrange thinly sliced roast beef in a single layer in hotel pans. Add 4 oz of gravy per pan (to keep moist) and cover with foil. Heat 15–20 minutes until warmed (do not overcook; medium-rare slices should reach 120–130°F when served). Keep warm in chafing dishes on low and serve with horseradish cream and grainy mustard on the side.

    Warm smoked turkey breast

    Place sliced smoked turkey in a shallow pan, brush lightly with 1 tbsp olive oil per pan and scatter a few lemon wedges across the meat. Cover and warm in a 325°F (160°C) oven for 12–15 minutes until 140–145°F. Transfer to serving platter and garnish with remaining parsley.

    Roasted baby potatoes

    Preheat oven to 400°F (200°C). Toss potatoes with 4 tbsp olive oil, 2 tsp salt and 1 tsp pepper. Spread on sheet pans in a single layer and roast 25–30 minutes, turning once, until golden and tender. Keep warm in pans for service.

    Seasonal vegetable medley

    Blanch broccoli and carrots in boiling salted water 2–3 minutes then shock in ice water. Sauté zucchini in 2 tbsp olive oil for 3–4 minutes until just tender. Combine vegetables, season with 1 tsp salt and 1/2 tsp pepper, and toss with 1 tbsp olive oil. Hold warm and finish with a sprinkle of grated parmesan before serving, if desired.

    Mediterranean pasta salad

    Cook pasta according to package directions until al dente. Drain and cool under cold water. Fold in halved cherry tomatoes, sliced olives, diced red onion and vinaigrette. Season with salt and pepper to taste. Chill until service and toss again briefly before plating.

    Mixed green salad

    Toss mixed greens gently with balsamic vinaigrette just before service (about 1–2 oz dressing per guest). Place dressing on the side for guests who prefer to dress individually. Top with lemon wedges and offer grated parmesan separately.

    Warm dinner rolls in an oven at 325°F (160°C) for 8–10 minutes covered with foil. Place butter packets on serving trays. Set horseradish cream, grainy mustard and remaining gravy in serving bowls with spoons and labels so guests can help themselves.

    Place ranch and balsamic vinaigrette in labeled squeeze bottles or bowls with serving utensils. Arrange lemon wedges and parmesan in separate containers for guests. Replenish as needed during service.

    Arrange assorted mini desserts on platters, aiming for 3 pieces per guest (total 75 pieces). Place fruit platter on a chilled tray or with ice underneath to keep cool. Refill throughout event as needed.

    Before service, drizzle remaining olive oil lightly over roasted potatoes and vegetables, sprinkle remaining chopped parsley across protein platters, and finish vegetables with remaining grated parmesan if desired. Check seasoning (salt/pepper) across all pans and adjust to taste.

    Set up chafing dishes for proteins and hot sides. Keep cold items on ice or refrigerated until service. Maintain hot items at 140°F (60°C) or above and cold items at 40°F (4°C) or below.
