Salad

Method

Salad

  1. 1

    Prepare lettuce

Wash and dry the romaine lettuce thoroughly. Chop or tear into roughly 1–1.5 inch pieces and place in a large salad bowl.

  2. 2

    Prep tomatoes and onion

Halve the cherry tomatoes. Thinly slice the red onion and separate into rings. Add both to the bowl with lettuce.

  3. 3

    Prepare avocado

Pit and peel the avocado. Dice it into 1/2-inch cubes and add to the bowl, tossing gently to combine so pieces remain intact.

  4. 4

    Add bacon and extras

Chop the cooked bacon into bite-sized pieces and sprinkle over the salad. If using, quarter the hard-boiled eggs and add, along with croutons.

  5. 5

    Finish and garnish

Toss the salad gently with 3/4 of the dressing (reserve remaining dressing to serve at the table). Sprinkle chopped fresh parsley over the top and serve immediately.

Homemade Avocado Ranch Dressing

  1. 6

    Combine base ingredients

In a blender or food processor, add the ripe avocado (scooped), mayonnaise, sour cream, and buttermilk.

  2. 7

    Add aromatics and seasonings

Add the chopped chives, parsley, dill, garlic clove, lemon juice, apple cider vinegar, honey (or maple syrup), kosher salt, and black pepper to the blender.

  3. 8

    Blend to smooth

Blend until smooth and creamy, scraping down the sides as needed. If the dressing is too thick, add water 1 tablespoon at a time (up to about 2 tablespoons) or extra buttermilk to reach desired pouring consistency.

  4. 9

    Taste and adjust

Taste the dressing and adjust seasoning: add more salt, lemon juice, or vinegar for brightness, or a touch more honey for sweetness as preferred.

  5. 10

    Chill before serving

Transfer the dressing to a jar and refrigerate for at least 15 minutes to let flavors meld. Shake or stir before serving. Keeps in the refrigerator for up to 3 days.
