Method

Potato Patties (Batata Vada)

Boil and mash potatoes

Place diced potatoes in a pot, cover with cold water, add 1/2 tsp salt, bring to a boil and cook until fork-tender (12–15 minutes). Drain thoroughly and return to the pot; steam briefly to remove excess moisture, then mash smooth and set aside to cool slightly.

Tempering

Heat 2 tbsp vegetable oil in a small pan over medium heat. Add mustard seeds and let them pop (about 30 seconds), then add cumin seeds and let sizzle. Add chopped green chilies and minced ginger; sauté 30–45 seconds until fragrant. Add turmeric and a pinch of asafoetida, stir briefly.

Combine filling

Add the tempering mixture to the mashed potatoes along with 1.5 tsp salt, 1 tbsp lime juice, chopped cilantro, and optional black pepper. Mix thoroughly, taste and adjust seasoning. Portion the mixture into 9 equal balls (about 70–80 g each), flatten slightly to form thick patties. Refrigerate 10 minutes to firm up, or proceed immediately if mixture is firm enough.

Chickpea Batter & Frying

Prepare batter

In a bowl, whisk together 1.5 cups besan, 1/4 cup rice flour, 1/2 tsp turmeric, 1/2 tsp red chili powder, 1 tsp salt, and 1/8 tsp baking soda (if using). Gradually add about 1 cup water while whisking to make a smooth, thick batter that coats the back of a spoon (adjust water slightly — batter should be thick, not runny). Let batter rest 5 minutes.

Heat oil

Pour vegetable oil into a deep, heavy-bottomed pan to a depth of about 2–3 inches (use enough so patties can float). Heat over medium-high to 180°C (350–360°F). If you don't have a thermometer, test by dropping a small bit of batter — it should sizzle and rise steadily.

Coat and fry patties

Dip each potato patty into the batter, ensuring an even coating. Carefully slide into hot oil, frying 3–4 patties at a time without overcrowding. Fry until batter is golden brown and crisp, about 3–4 minutes, turning as needed. Remove with a slotted spoon and drain on a wire rack or paper towels. Keep warm and repeat with remaining patties.

Mint (Green) Chutney

Combine packed mint leaves, packed cilantro, 1 green chili, 1/2 tsp ginger, 1 tbsp lime juice, 1/2 tsp salt, 2 tbsp water, and 1/4 tsp sugar (if using) in a blender. Blend to a smooth paste, scraping sides as needed. Adjust salt, heat, and acidity to taste. Transfer to a small bowl and refrigerate until assembly.

Tamarind Chutney (Sweet & Tangy)

Whisk together 2 tbsp tamarind paste with 3 tbsp warm water until smooth. Stir in 2 tbsp jaggery (or brown sugar) until dissolved, then add 1/4 tsp ground cumin, 1/4 tsp red chili powder and 1/4 tsp salt. Taste and adjust sweetness or tang; keep at room temperature or refrigerate.

Assembly & Sliders

Prepare buns

Heat a skillet over medium-low heat. Spread a little butter on the cut sides of the 9 slider buns. Toast buttered sides in the skillet until lightly golden and crisp, 1–2 minutes. Optionally sprinkle a little dry garlic chutney or garlic powder on the toasted side for extra flavor.

Assemble sliders

Spread 1–2 tsp mint chutney on the bottom half of each bun and 1 tsp tamarind chutney on the top half (or drizzle tamarind on top of the vada after placing it). Place one hot fried potato vada into each bun. Add an optional fried green chili to each slider, if using. Close buns and press lightly.

Serve

Arrange sliders on a platter and serve immediately while vadas are hot and crisp, with extra mint and tamarind chutneys on the side for dipping.
