Prepare Mango

Check and Chop Mango

If using fresh mango, wash, peel, and dice enough mango to measure 1 cup of packed pieces. If mango is very ripe and soft, break into pieces by hand. If using frozen mango, measure 1 cup and allow to sit 3–5 minutes to slightly soften.

Blend Lassi

Combine Ingredients

In a blender add the 1 cup chopped mango, 1 cup plain whole-milk yogurt, 1 cup milk, 2 tablespoons honey or sugar, 1 teaspoon lime juice, 1 teaspoon ground cardamom, and a pinch of salt. If you prefer a chilled, slushy lassi, add 4 ice cubes now.

Blend Smooth

Secure the blender lid and blend on high until completely smooth and slightly frothy, about 30–60 seconds depending on blender power. Stop and scrape down the sides with a spatula if needed, then blend another 10–15 seconds.

Adjust Consistency and Sweetness

Taste the lassi. If too thick, add up to 1/4 cup more milk and blend briefly. If not sweet enough, add additional honey or sugar by 1/2 tablespoon increments and blend to combine. Adjust lime juice to brighten flavor if desired.

Serve

Pour the mango lassi into 2 tall glasses (or 3 small glasses).

Garnish each glass with a pinch of chopped pistachios, a small mint leaf, and a thin slice of mango if using. Serve immediately while cold.
