Samosas (store-bought or homemade)

Method

Prepare chickpea topping

Heat 1 tablespoon oil in a small skillet over medium heat until shimmering.

Add 1 teaspoon cumin seeds and let them sizzle for 20–30 seconds until aromatic.

Add 1/4 cup finely chopped onion and sauté 2–3 minutes until translucent and lightly browned at the edges.

Stir in 1 clove minced garlic and 1/2 teaspoon minced ginger; cook 30 seconds until fragrant.

Add 1/4 cup chopped tomato and cook 2–3 minutes until it softens and starts to break down.

Stir in 1/2 tsp ground coriander, 1/2 tsp ground cumin, 1/4 tsp garam masala, 1/4 tsp turmeric, 1/8 tsp red chili powder and 1/2 tsp salt. Cook 30–45 seconds to bloom the spices.

Add 1 cup drained chickpeas and 3 tablespoons water. Toss to coat and simmer gently 4–5 minutes so the chickpeas absorb the flavors; lightly mash a few with the back of a spoon for texture.

Turn off heat, stir in 2 tablespoons chopped cilantro and 1 teaspoon lemon juice. Taste and adjust salt or chili. Keep warm.

Reheat samosas

If using pre-cooked samosas, reheat them to crisp: heat 1 tablespoon oil in a nonstick skillet over medium, add samosas and fry 2–3 minutes per side until golden and crisp (alternatively bake at 200°C/400°F for 7–10 minutes).

Place each hot samosa on an individual serving plate.

Assemble chaat

Spoon half of the warm chickpea mixture evenly over each samosa (about 1/2 cup chickpea mix per samosa).

Drizzle about 1 tablespoon whisked yogurt over each samosa, making a thin coating. If yogurt is thick, loosen with a teaspoon of water till pourable.

Drizzle 1 tablespoon tamarind chutney and 1 tablespoon mint chutney over each samosa in a zigzag or circular pattern (adjust to taste).

Scatter 1 tablespoon thinly sliced red onion over each, then sprinkle 1 tablespoon sev for crunch and 1/2 teaspoon chaat masala.

Garnish with a few pomegranate seeds (optional) and a sprinkle of chopped cilantro. Serve immediately with a lime wedge on the side.
