Grill the Chicken

Preheat a grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Let them rest for a few minutes before slicing into thin strips.

Caramelize the Onions

In a skillet, heat 2 tablespoons of olive oil over medium heat. Slice the onion thinly and add it to the skillet. Stir occasionally and cook for 15-20 minutes until the onions are soft and caramelized. Season with a pinch of salt.

Assembling the Quesadilla

Layer the Ingredients

On one half of a flour tortilla, layer a portion of the grilled chicken, a generous amount of jack cheese, some pico de gallo, and a portion of the caramelized onions.

Fold and Cook

Fold the tortilla over the filling to create a half-moon shape. Heat a non-stick skillet over medium heat and place the quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

Serving the Quesadilla

Cut and Serve

Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with house salsa and sour cream on the side.
