Method

Preparation of Base

  1. 1

    Wash and Prepare Greens

In a large mixing bowl, add the romaine lettuce and spinach. Rinse thoroughly under cold water to remove any dirt or pesticides. Pat dry with a clean kitchen towel or use a salad spinner.

  2. 2

    Chop Greens

Chop the romaine lettuce into bite-sized pieces and add to the mixing bowl with the spinach. Toss gently to combine.

Adding Toppings

  1. 3

    Prepare Vegetables

Halve the cherry tomatoes and add them to the salad bowl. Peel and dice the cucumber, then add to the bowl. Thinly slice the red onion and bell pepper, adding both to the mixture. Finally, shred the carrots and toss them in.

  2. 4

    Add Avocado

Cut the avocado in half, remove the pit, and scoop the flesh out into the bowl. Dice the avocado into smaller pieces and gently mix them in to avoid mashing.

Adding Proteins

  1. 5

    Incorporate Protein

If using grilled chicken, slice it into strips and add to the salad. For chickpeas, rinse and drain them before adding to the bowl. Sprinkle the crumbled feta cheese over the top.

Dressing the Salad

  1. 6

    Prepare Dressing

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper until well combined.

  2. 7

    Dress the Salad

Drizzle the dressing over the salad mixture and toss gently to ensure all ingredients are evenly coated with the dressing. Adjust seasoning with additional salt and pepper if desired.
