Preparing the Salad

    Chop the Vegetables

    Wash and chop the romaine lettuce into bite-sized pieces. Peel the cucumber and slice it into thin rounds. Peel and julienne the carrot. Dice the red bell pepper into small pieces. Halve the cherry tomatoes.

    In a large bowl, combine the chopped romaine lettuce, cucumber slices, julienned carrot, diced red bell pepper, and halved cherry tomatoes. Toss to mix evenly.

Making the Dressing

    Mix the Ingredients

    In a small bowl, combine 3 tablespoons of peanut butter, 2 tablespoons of soy sauce, 2 tablespoons of lime juice, 1 tablespoon of chili paste, 1 teaspoon of honey, minced garlic, grated ginger, 1 teaspoon of sesame oil, and 2 tablespoons of water.

    Use a whisk or fork to mix all the ingredients together until smooth and well combined. Adjust consistency with more water if necessary.

Assembly

    Pour the spicy dressing over the salad base and toss well to ensure all the vegetables are coated.
