Cooking Couscous

    Prepare Couscous

    In a medium saucepan, bring 1.5 cups of water to a boil. Add 1 cup of couscous, stir, cover, and remove from heat. Let it sit for 5 minutes.

    After 5 minutes, uncover the saucepan and fluff the couscous with a fork to separate the grains.

Preparing Vegetables

    Chop Vegetables

    While the couscous is resting, wash and dice the cherry tomatoes, cucumber, red onion, and bell pepper into bite-sized pieces.

    Pit and Slice Olives

    Pit the Kalamata olives if they are not already pitted, and slice them in half.

Mixing Ingredients

    In a large mixing bowl, combine the fluffed couscous, chopped vegetables, and olives.

    Chop the fresh parsley and add it to the bowl along with dried oregano, salt, and black pepper to taste.

Making Dressing

    In a small bowl, whisk together 3 tablespoons of extra virgin olive oil and 2 tablespoons of lemon juice until well combined.

Final Assembly
