Prepare the Ingredients
Chop the bell pepper, rinse and chop the spinach if using fresh, and set aside. If using cooked chicken, shred it into bite-sized pieces.

Mix the Filling
In a large bowl, combine the shredded cheddar cheese, mozzarella cheese, chopped bell pepper, chopped spinach, corn, and cooked chicken (if using). Add ground cumin, salt, and black pepper to taste. Mix well until everything is evenly combined.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Allow it to warm up for about 1-2 minutes.

Assemble the Quesadillas
Place one tortilla in the skillet. Evenly spread a generous amount of the filling mixture over one half of the tortilla. Fold the other half over the filling to create a half-moon shape.

Cook the Quesadilla
Cook for about 2-3 minutes until the bottom is golden brown. Carefully flip the quesadilla using a spatula and add another tablespoon of olive oil if needed. Cook the other side for another 2-3 minutes until it is golden and the cheese is melted.

Repeat the assembly and cooking process for the remaining tortillas and filling mixture.

Once cooked, remove the quesadillas from the skillet and let them cool slightly. Cut into wedges and serve warm. Optionally, serve with salsa, guacamole, or sour cream on the side.
