Protein Preparation

  1. 1

    Cook the Chicken

Preheat your grill or skillet over medium-high heat. Season the chicken breast with salt and pepper to taste. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for 5 minutes before slicing.

Cilantro Lime Rice Preparation

  1. 2

    Cook the Rice

In a saucepan, bring 2 cups of water to a boil. Add the white rice and salt, cover, and reduce the heat to low. Simmer for about 18-20 minutes or until the water is absorbed. Remove from heat and let it sit covered for another 5 minutes.

  2. 3

    Add Cilantro and Lime

Fluff the rice with a fork. Stir in the chopped cilantro and lime juice. Mix well to combine and set aside.

Beans Preparation

  1. 4

    Heat the Black Beans

In a small saucepan, heat the canned black beans over medium heat, stirring occasionally until warmed through. This should take about 5 minutes.

Assembling the Bowl

  1. 5

    Build Your Bowl

In a serving bowl, layer the cilantro lime rice first, followed by the sliced chicken, warmed black beans, shredded jack cheese, and chopped romaine lettuce. Top with sour cream, pico de gallo, corn salsa, and roasted tomato salsa. Drizzle house hot sauce over the top to taste.
