Loaded Hashbrown Tumblers

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Prepare Hashbrowns

In a large bowl, mix the frozen hashbrowns with olive oil, salt, and black pepper until well combined.

  3. 3

    Form Hashbrown Base

Grease a muffin tin with cooking spray. Using your hands, press the hashbrown mixture into the bottom and up the sides of each muffin cup to form a small cup.

  4. 4

    Bake Hashbrown Cups

Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the hashbrowns are golden brown and crispy.

  5. 5

    Prepare Filling

In a medium bowl, whisk together the eggs, then add in the shredded cheddar cheese, crumbled bacon, sour cream, and chopped green onions. Mix until combined.

  6. 6

    Fill Hashbrown Cups

Once the hashbrown cups are baked and slightly cooled, remove them from the muffin tin. Fill each cup generously with the egg mixture.

  7. 7

    Final Bake

Return the filled hashbrown cups to the oven and bake for an additional 15-20 minutes, or until the egg is set and the tops are slightly golden.

  8. 8

    Serve

Let the loaded hashbrown tumblers cool for a few minutes. Carefully remove them from the muffin tin and serve warm.
