Pound the chicken
Place each chicken breast between two sheets of plastic wrap. Using a meat mallet, gently pound to an even thickness of about 1/4 inch (6 mm).

Prepare the marinade
In a small bowl, whisk together 2 tablespoons olive oil, 1 tablespoon fresh lemon juice, 2 minced garlic cloves, 1 teaspoon dried oregano, 1/2 teaspoon paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

Marinate the chicken
Toss the pounded chicken with the marinade until evenly coated. Cover and refrigerate for 15-30 minutes to allow flavors to penetrate.

Preheat the grill
Preheat grill to medium-high heat (about 425-450°F / 220-230°C). Lightly oil the grates to prevent sticking.

Grill the paillards
Remove the chicken from the marinade and grill for 3-4 minutes on each side, flipping once, until the internal temperature reaches 165°F (74°C) and the juices run clear.
