SPECIALITÃ DELLA CASA
- 1
Prep and season
Rinse the shrimp and pat dry. Lightly season with a pinch of salt and pepper or set aside to season later as desired.
- 2
Sauté aromatics
In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- 3
Build the fra diavolo sauce
Stir in the crushed tomatoes and tomato paste. Pour in the white wine and bring to a simmer. Let the sauce cook and reduce for 8–10 minutes, stirring occasionally. Season with salt and pepper to taste.
- 4
Cook the shrimp
Add the shrimp to the sauce in a single layer. Cook for 2–3 minutes, until they turn pink and opaque, then flip and cook another 1–2 minutes. Do not overcook.
- 5
Finish and brighten
Stir in chopped parsley, torn basil leaves, and lemon juice. Taste and adjust seasoning with salt and pepper if needed.
- 6
To serve
Serve the fra diavolo shrimp hot, with crusty bread or spooned over cooked pasta. Garnish with extra parsley or basil if desired.
