    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash and cut the potatoes into wedges. Toss them in a bowl with olive oil, salt, and black pepper. Spread them on a baking sheet.

    Roast the Potatoes

    Place the baking sheet in the oven and roast the potatoes for 25-30 minutes, or until golden brown and crispy, flipping halfway through.

    Prepare the Garlic

    While the potatoes are roasting, prepare the garlic. Cut the top off the bulb of garlic to expose the cloves. Drizzle with olive oil and wrap in aluminum foil.

    Roast the Garlic

    Add the wrapped garlic to the oven for the last 20 minutes of the potato roasting time.

    Cook the Steak

    Season the New York Strip steak with salt and black pepper on both sides. Heat a skillet over medium-high heat and add a little olive oil. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest and Serve

    Remove the steak from the skillet and let it rest for 5 minutes. Squeeze the roasted garlic out of its skin and mash it with a fork. Serve the steak topped with salsa verde, alongside the roasted potatoes and mashed roasted garlic.
