Method

Prepare the Calamari

  1. 1

    Coat the Calamari

In a large bowl, combine the flour, cornstarch, salt, and black pepper. Dredge each piece of calamari in the mixture, ensuring they are well coated.

  2. 2

    Heat the Oil

In a deep skillet or fryer, heat the olive oil over medium-high heat until it reaches 350°F (175°C).

  3. 3

    Fry the Calamari

Fry the calamari in batches for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make the Pomodoro Sauce

  1. 4

    Sauté the Garlic

In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  2. 5

    Cook the Sauce

Add the canned crushed tomatoes, basil, salt, and black pepper. Simmer for about 10 minutes, stirring occasionally.

Plate the Dish

  1. 6

    Serve the Calamari

Arrange the fried calamari on a serving platter. Drizzle with warm pomodoro sauce, then garnish with sliced cherry peppers and lemon wedges.
