Prepare the meat
Rinse the pork under cold water and pat thoroughly dry with paper towels. If using a whole shoulder or leg, optionally score the skin in a tight diamond pattern with a sharp knife, cutting through skin but not deep into meat (about 2–3 mm). This helps render fat and crisp the skin.

Make the marinade
In a food processor or large bowl, combine peeled garlic cloves, thyme, oregano, bay leaves, lime juice, white wine (or beer), olive oil, soy sauce (if using), annatto oil (or paprika). Blitz or whisk until a coarse paste/emulsion forms.

Season the pork liberally: rub 4 tablespoons of the coarse kosher salt and the freshly ground black pepper all over the meat, including inside any cavity if present. Reserve 2 tablespoons salt for final skin treatment. Massage the garlic-herb marinade all over the pork, working it under the skin where possible and into any cuts. Place meat in a large nonreactive container or resealable bag.

Marinate in refrigerator for at least 8 hours and up to 24 hours (preferably overnight). Turn once or twice to redistribute the marinade so all sides absorb flavor.

Prepare crisping rub
Combine granulated garlic, onion powder, brown sugar, smoked paprika, and the remaining 2 tablespoons sea salt in a small bowl. Mix thoroughly.

Remove the pork from the refrigerator at least 1 hour before roasting to come toward room temperature. Preheat the oven to 160°C (320°F). Place a large roasting pan rack in the pan and arrange the optional aromatics (onions, carrots, celery, garlic) in the bottom to create a flavor bed; add 500 ml water or stock to the pan.

Pat the skin again dry with paper towels. If the skin was scored, sprinkle the reserved sea salt into the cuts and over the skin; this draws moisture and helps crackle. Rub the brown-sugar-spice mixture over the meaty sides (not directly into the already-salted skin). Tie the meat with butcher’s twine if necessary to keep shape and ensure even cooking.

Place the pork on the roasting rack, skin side up. Tent loosely with foil (shiny side out) for the initial slow roast. Roast in the preheated oven at 160°C (320°F) for approximately 3 hours (roughly 30 minutes per 500 g), or until an instant-read thermometer in the thickest part reads 63°C (145°F). Baste the meat every hour with 2–3 tablespoons of the melted butter mixed with a little marinade juices for color and moisture.

After the initial roast and when the internal temperature reaches 63°C (145°F), remove the foil. Increase oven temperature to 230°C (450°F) (or turn on broiler/grill if oven has reliable broil). Brush the skin with remaining olive oil (or a thin layer of melted butter) and roast at high heat for 20–30 minutes, watching carefully, until the skin is deeply blistered, puffed, and crisp (an internal temperature may rise to 70–74°C/158–165°F in spots of connective tissue). If using broiler, keep the oven door slightly ajar and watch constantly to avoid burning. If the skin begins to brown too quickly, reduce to 200°C and continue until crackling develops.

If at any point the skin is bumpy but moist, remove pork from oven and pat skin dry immediately with paper towels (be careful — hot!). Return to high heat to finish crisping.
Resting, Carving & Serving

Once the skin is crackled and a thermometer in the thickest meat (not touching bone) reads at least 68°C (155°F) for well-done connective areas, remove the pork from the oven. Transfer to a cutting board and tent loosely with foil. Rest for 20–30 minutes to let juices redistribute — this also helps set the crackling.

To carve, remove twine and use a sharp slicing knife. Cut through crackling and rind to the meat, then slice or pull the meat into portions. Serve skin pieces (crackling) alongside roasted meat with pan jus and roasted vegetables.
