Prepare bread
Spread 1/2 tablespoon of the softened butter evenly on the outside face of each bread slice. On the inside face of one slice, spread 1 teaspoon mayonnaise and on the inside face of the other slice, spread 1 teaspoon Dijon mustard. This creates a balanced flavor and helps the bread brown evenly.

Assemble filling
Place the sliced cheddar cheese onto the mayonnaise-spread slice. Layer the sliced deli ham on top of the cheese. If using, add the tomato slices and pickle slices on top of the ham. Sprinkle about 1/4 teaspoon black pepper over the filling for seasoning.

Close and press
Close the sandwich with the mustard-spread slice of bread, buttered side out. Press gently to compact the sandwich so the ingredients hold together while cooking.

Cook
Heat a nonstick skillet or griddle over medium heat. Place the sandwich in the skillet and cook for 2.5–3 minutes until the bottom is golden brown. Carefully flip the sandwich and cook another 2.5–3 minutes until the other side is golden and the cheese is melted. If the cheese needs more melting but the bread is browning too quickly, lower the heat to low, cover the skillet with a lid for 1–2 minutes to trap heat and finish melting the cheese.

Rest and slice
Transfer the sandwich to a cutting board and let rest 1 minute to avoid hot filling spillage. Slice the sandwich diagonally or down the middle, as preferred.

Serve
Serve immediately while warm. Optional sides: potato chips, a small salad, or fresh fruit.
