Prep Pastry and Filling

    Preheat and prepare

    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone liner. Lightly dust a clean work surface with the all-purpose flour.

    Prepare pastry sheets

    Unfold/thaw the puff pastry sheets according to package instructions. Using a rolling pin, gently roll each sheet to even out folds and to roughly 12 x 9 inches. Cut each sheet into 4 equal rectangles (about 6 x 4.5 inches) to make 8 pastries total.

    Make cream cheese filling

    In a medium bowl, beat the softened cream cheese with the granulated sugar and vanilla extract until smooth and no lumps remain. Scrape down the bowl. Transfer to a piping bag or keep in a bowl for spreading.

    Prepare guava

    Cut the firm guava paste into 8 equal slices (about 1.5 oz / 40 g each). If guava paste is very hard, microwave the block for 6–10 seconds to soften slightly, or place slices in a small saucepan with 1 tsp lime juice over low heat and warm until malleable but not melted. Set aside.

    Assemble each pastry

    Place the pastry rectangles on the prepared baking sheet, spacing them about 1 inch apart. If you prefer a border, use a fork to gently score a 1/2-inch border inside the edge of each rectangle (do not pierce through). Brush the border lightly with the egg wash (see next step).

    Egg wash

    Whisk the egg with 1 tsp water to make an egg wash. Lightly brush the outer 1/2-inch border of each pastry rectangle with the egg wash to help the edges brown and seal if needed.

    Fill pastries

    Spoon or pipe approximately 1 heaping tablespoon (about 15–18 g) of the cream cheese mixture into the center of each rectangle, keeping it within the unbrushed inner area. Place one slice of guava paste on top of the cream cheese in each pastry. Press down lightly so it adheres.

    Optional: seal and decorate

    If you want enclosed turnovers, fold one side over and crimp edges. For open-faced tarts, leave as-is and optionally brush exposed filling edges with a little egg wash for color. Use a sharp knife to score the guava lightly for decorative lines to help release steam.

Bake and Finish

    Bake

    Bake in the preheated 400°F (200°C) oven for 12–18 minutes, rotating the sheet halfway through, until pastries are puffed and golden brown. Keep an eye on the guava paste: it may soften and caramelize on top — that's desirable.

    Cool

    Remove from the oven and allow pastries to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool another 10–15 minutes. Cooling briefly helps the cream cheese set so slices keep shape.

    Finish and serve

    Just before serving, dust pastries lightly with confectioners' sugar and sprinkle a small amount of lime zest over the top if using. Serve warm or at room temperature.
