Halve the avocados lengthwise, remove pits, and scoop flesh into a medium mixing bowl. Finely dice the tomato after cutting it in half and removing seeds; place in a small bowl and set aside. Finely mince the red onion and jalapeño (if using). Chop the cilantro leaves and squeeze the limes to yield about 2 tablespoons of juice.

Mash avocados
Using a fork or potato masher, roughly mash the avocado in the mixing bowl. Leave some chunks for texture — aim for a partly smooth, partly chunky consistency.

Combine ingredients
Add the minced red onion, diced tomato (drained of excess juice), chopped cilantro, and minced jalapeño to the mashed avocado. Pour in the fresh lime juice.

Sprinkle in the kosher salt, black pepper, and optional cumin. Fold the mixture gently with a spatula or spoon until evenly combined. Taste and adjust seasoning: add more salt or lime juice as needed.

Rest for flavors to meld (optional)
Let the guacamole sit for 10–15 minutes at room temperature, loosely covered, to allow flavors to blend. If making ahead, press a piece of plastic wrap directly onto the surface to minimize browning and refrigerate for up to 24 hours.

Transfer the guacamole to a serving bowl. Garnish with extra cilantro sprigs and a lime wedge. Serve immediately with tortilla chips or sliced vegetables.
