Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until set. Allow to cool.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the remaining granulated sugar, vanilla extract, and powdered sugar. Beat until combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth.

Assemble the cheesecake
Pour the cream cheese filling over the cooled crust and spread it evenly. Refrigerate for at least 4 hours or overnight to set.

Prepare the strawberries
Slice the fresh strawberries and toss them with a tablespoon of sugar to macerate for about 15 minutes.

Once the cheesecake has set, top with the macerated strawberries and serve chilled.
