Marinate the wings

Pat wings dry with paper towel. In a large bowl, combine red curry paste, minced garlic, grated ginger, fish sauce, brown sugar, vegetable oil, salt, and black pepper. Add wings and toss to coat thoroughly. Marinate at least 30 minutes at room temperature or up to 4 hours in the fridge.

Cook the wings

Preheat oven to 425°F (220°C). Arrange wings on a rimmed baking sheet lined with foil and a wire rack if available. Bake for 25–30 minutes, flipping halfway, until internal temperature reaches 165°F (74°C) and skin is crisp. Alternatively, shallow-fry or deep-fry wings at 350°F (175°C) until golden and cooked through, about 8–10 minutes per batch. Reserve on a paper towel-lined tray.

Prepare pimento cheese

In a medium bowl, beat softened cream cheese until smooth. Add grated cheddar, mayonnaise, chopped pimentos, finely chopped makrut lime leaves, lemon juice, hot sauce (if using), salt, and black pepper. Stir until evenly combined but still slightly textured. Adjust seasoning to taste. Chill briefly if too soft—about 15 minutes—to firm for spreading.

Make the hot honey

In a small saucepan over low heat, combine honey, chili flakes, and rice vinegar. Warm gently for 2–3 minutes just to infuse flavors — do not boil. Taste and adjust heat (add more chili flakes for spice). Keep warm or set aside at room temperature.

Toast buns

Heat a skillet over medium heat. Spread softened butter on cut sides of the rolls/buns and toast in skillet until golden brown, 1–2 minutes per side. Set aside.

Assemble sandwiches

Spread a generous layer (about 2–3 tablespoons) of makrut lime leaf pimento cheese on the bottom half of each toasted bun. Top with 3–4 red curry wings (remove bones if preferred — pull meat from bones for a more sandwich-friendly filling). Drizzle 1–2 teaspoons of hot honey over the wings, then add a spoonful (about 1–2 tablespoons) of sliced banana peppers for tang and crunch. Finish with the top bun and press gently.

Serve

Serve immediately while wings are warm and hot honey is slightly fluid. Offer extra hot honey and banana peppers on the side. Leftover pimento cheese keeps covered in the refrigerator for up to 4 days.
