Prepare Rim

Pour salt and tajín (or ground chili powder) onto a small plate and mix to combine. Rub the glass rim with the lime juice (use a lime wedge). Dip the wet rim into the chili-salt mixture and twist to coat evenly. Set the glass aside to let the rim dry slightly.

Make Chili-Garlic Base

Remove stems from the Thai red chilies and roughly chop. Peel the garlic clove. Place chilies and garlic in a small mortar and pestle (or small food processor). Crush or pulse until finely chopped but not puréed—keep some texture for visual appeal and bursts of heat.

Build Umami-Sour-Sweet Seasoning

Transfer the crushed chilies and garlic to a small bowl. Add fish sauce, soy sauce, fresh lime juice, rice vinegar, and brown sugar. Stir until the sugar dissolves. Taste and adjust: add an extra tsp of lime juice for more brightness, a dash more fish sauce for saltiness, or a splash of water (up to 1 tsp) to loosen if too intense.

Optional Rest

Let the mixture sit 2–5 minutes so flavors meld and some salt dissolves. If you prefer a smooth mix, briefly press through a fine sieve, reserving solids for garnish. Otherwise keep as-is for texture.

Fill the rimmed glass with ice (about 1 cup).

Spoon 1–2 teaspoons of the Thai Chili Mix into the glass over the ice. For a spicier drink use 2 tsp; for milder, use 1 tsp. If you strained the mix, use the strained liquid; if not, use the whole mixture.

Pour in the tomato juice or Clamato (about 3 oz). Gently roll or stir once to combine with the chili mix and ice, taking care not to disturb the rim too much.

Tilt the glass slightly and slowly pour the chilled beer (12 oz) down the inside so it layers gently. Use a spoon to slow the pour if desired. Stir once gently 2–3 strokes to marry the beer with the other components.

Taste and adjust: add a squeeze of fresh lime wedge if you want more acidity, or a pinch more chili mix for heat. If the drink is too salty or strong, add a splash (1–2 tsp) of extra tomato juice or a teaspoon of water.

Garnish with a lime wedge on the rim and a cilantro sprig. Optionally thread a cucumber slice or celery stick on the rim or inside the glass for extra freshness. Serve immediately.
