Prepare (if making cordial from scratch)
If you do not have pre-made lemongrass-lime cordial, make a quick cordial by simmering 1/2 cup water with 1/2 cup sugar until dissolved, add 2 stalks bruised lemongrass and the zest/juice of 2 limes, cool and strain. Use chilled; recipe above yields ~8 ounces.
Chill a coupe or rocks glass by filling it with ice water while you mix the cocktail.
Add the coconut gin, guava purée, lemongrass-lime cordial, fresh lime juice and simple syrup (if using) into a cocktail shaker.
Add a good scoop of ice to the shaker (about 1 cup) and shake hard for 12–18 seconds until well chilled.
Discard ice/water from the chilled glass and double-strain the cocktail into the glass (use a Hawthorne strainer and a fine mesh strainer) to remove ice shards and any pulp for a smooth presentation.
Garnish & Finish
Garnish with a lime wheel or wedge on the rim. If you used egg white, place a small sprig of lemongrass or herb on the foam and lightly express its oils over the drink by giving it a gentle clap near the surface.
Optionally float a dehydrated guava slice or a pinch of lime zest on the foam for aroma and visual appeal.
Serve immediately.
