Prepare curds
Pat the cheese curds dry with paper towels. If curds are very large, cut into bite-size pieces about 1 to 1.25 inches. Keep curds chilled until ready to bread to reduce melting during frying.

Set up breading stations
Line three shallow bowls or plates: (1) mix 1 cup flour + 1/4 cup cornstarch + 3/4 tsp salt + 1/4 tsp black pepper; (2) whisk together 2 eggs and 1/2 cup milk until smooth; (3) combine 1.5 cups panko + 1/4 cup grated Parmesan + 1 tsp garlic powder + 1/2 tsp onion powder + 1/2 tsp paprika. Keep everything within reach and dry.

Bread the curds (double-coat for best results)
Working in batches of 8–10 curds, dredge each curd in the flour mixture, shaking off excess. Dip into the egg-milk mixture, then press into the panko mixture to coat thoroughly. For a thicker crust, return each coated curd to the egg mix and then into the panko again (double coat). Place finished curds on a parchment-lined tray and chill in the refrigerator for 15–20 minutes to set the coating; this reduces cheese leakage during frying.
Wet Batter (optional thicker batter)

If you prefer a crisp wet batter instead of or in addition to the panko, whisk 1/2 cup cold beer or sparkling water with 1/2 cup flour, 1 tbsp cornstarch and 1/4 tsp salt until just combined (small lumps okay). For batter method: skip the egg station and dip curds into the batter, then into panko for an extra-crisp shell, or fry directly from batter for a smooth golden crust. Keep batter cold.

Heat oil
Pour about 3–4 inches of oil into a heavy pot or deep fryer; heat to 350°F (175°C). If you don't have a thermometer, heat until a 1-inch cube of bread browns in ~40–45 seconds. Maintain oil temperature between 340–360°F while frying.

Fry curds
Fry breaded curds in small batches (6–8 at a time) for 1.5–3 minutes, turning as needed, until golden brown and crisp. Because curds are already soft, they need only a short fry—watch carefully to avoid bursting the coating. If using wet batter straight, fry until batter puffs and turns deep golden (about 2–3 minutes).

Drain and rest
Using a slotted spoon or spider, transfer fried curds to a wire rack set over a baking sheet or to paper towels to drain. Allow to rest 1–2 minutes so cheese firms slightly; they will be hot inside.
