Garnish & Rim
Method
Prepare Glass
- 1
Rim the glass
Pour the Tajín into a shallow dish. If desired, mix the Tajín with the coarse salt for a slightly less spicy, more textured rim. Run the lime wedge around the outer rim of a rocks or coupe glass to moisten, then dip the rim into the Tajín (or Tajín-salt mix) and twist to coat evenly. Set the glass aside.
- 2
Make Watermelon Puree (if not pre-made)
- 3
Seed and cube about 2 cups (approx. 300–350 g) of ripe watermelon. Place cubes in a blender and puree until smooth, about 20–30 seconds. Strain through a fine-mesh sieve into a bowl to remove pulp if you prefer a silky texture, pressing on solids with a spoon. Yield: about 1 cup (8 oz) puree; measure 3 oz for one cocktail.
Mix Cocktail
- 4
In a cocktail shaker, add 2 oz blanco tequila, 1 oz orange liqueur, 3 oz fresh watermelon puree, 0.75 oz fresh lime juice, and 0.5 oz agave nectar.
- 5
Add ice to the shaker (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and slightly frosty.
- 6
If serving over ice: Strain the mixture into the prepared glass filled with ice using a Hawthorne strainer or fine mesh strainer. If serving up: Double-strain into the chilled, rimmed glass to remove ice shards and any pulp.
Garnish & Serve
- 7
Garnish with a small watermelon wedge or a lime wheel on the rim and, if desired, a light sprinkle of Tajín over the top of the cocktail for extra flavor.
- 8
Serve immediately. Optional: provide a straw or stirrer.
