Method

Roasted Red Peppers

    Preheat the oven to 450°F (230°C). Line a baking sheet with foil or parchment.

    Place whole red bell peppers on the prepared sheet. Drizzle with 1 tbs olive oil and sprinkle with 1 tsp kosher salt and 1 tsp black pepper; toss to coat.

    Roast for 25–30 minutes, turning the peppers every 8–10 minutes, until skins are blackened and blistered on all sides.

    Remove from oven and transfer peppers to a heatproof bowl; cover tightly with plastic wrap or a plate to steam for 15 minutes. This loosens the skins.

    Peel off skins, remove stems, seeds, and membranes. Slice into 1/2-inch wide strips and set aside. Reserve any juices in the bowl.

House-Smoked Onions

    While peppers roast, prepare a stovetop smoking method: heat a heavy skillet over medium-low heat and add a thin layer of wood-smoke chips in a small aluminum foil packet with holes (or use a smoking gun). If you have a grill or smoker, you can smoke the onions externally at 225°F (110°C) for 20–30 minutes—otherwise we'll mimic smoke with smoked paprika.

    Slice onions into 1/4-inch rings. In a large skillet, heat 1 tbs olive oil and 1 tbs butter over medium heat until shimmering.

    Add sliced onions and sauté for 4–5 minutes until they begin to soften. Sprinkle 1 tsp smoked paprika and 1 tsp brown sugar over onions; continue to cook, stirring occasionally, until onions are deeply caramelized, about 15–18 minutes total. Reduce heat if onions risk burning.

    Season with 1 tsp kosher salt and 1/2 tsp black pepper. If you used the stovetop smoke method, carefully introduce the smoke at low heat for 2–3 minutes to infuse. Transfer smoked onions to a bowl and keep warm.

Wine-Braised Mushrooms

    Clean mushrooms by wiping with a damp towel and trim stems if needed; halve larger mushrooms so pieces are roughly uniform.

    Finely mince the shallot and garlic. In a medium skillet, heat 1 tbs olive oil and 1 tbs butter over medium-high heat until bubbly.

    Add mushrooms in a single layer (cook in two batches if necessary) and let sear without moving for 2–3 minutes so they brown. Stir and continue cooking until they give off moisture, about 4–5 minutes.

    Add the minced shallot and garlic; sauté 1–2 minutes until fragrant but not browned.

    Pour in 1 cup dry white wine and scrape up any browned bits from the pan. Add 1 tsp fresh thyme, 3/4 tsp kosher salt, and 1/2 tsp black pepper.

    Bring to a gentle simmer and braise until the liquid has reduced to a glossy sauce that just coats the mushrooms, about 8–10 minutes. Taste and adjust seasoning. Keep warm.

Tex-Mex Crème Drizzle

    In a small bowl, combine 1/2 cup sour cream, 2 tbs mayonnaise, 1 tbs lime juice, 1 tsp finely chopped chipotle in adobo, 1/2 tsp ground cumin, 1/2 tsp smoked paprika, and 1/4 tsp kosher salt.

    Whisk until smooth. If the mixture is too thick for drizzling, thin with up to 1 tbs water until it reaches a pourable consistency.

    Taste and adjust heat or acidity — add more chipotle for heat or another 1/2 tbs lime juice for brightness.

Assembly & Garnish

    Arrange roasted red pepper strips on a serving platter as a base layer.

    Top peppers with a generous portion of house-smoked onions, distributing evenly.

    Spoon the wine-braised mushrooms over the onions and peppers, allowing some of the braising liquid to mingle with the roasted pepper juices.

    Drizzle the Tex-Mex crème over the assembled vegetables in a zigzag or circular pattern to your liking.

    Finish with a light drizzle of 1/2 tbs olive oil, a sprinkle of flaky finishing salt (about 1/4 tsp), 1/4 tsp freshly ground black pepper, and 2 tbs chopped cilantro.

    Serve warm or at room temperature as an appetizer, tapas, or atop toasted bread for crostini.
