    Pat the 1.5 lbs of fresh chicken wings dry with paper towels. Remove any excess skin or wing tips if desired. Place wings in a large bowl.

    Season wings evenly with 1 tsp kosher salt, 1 tsp freshly ground black pepper, and 1/2 tsp garlic powder. Toss with 1 tablespoon neutral oil to coat. Let rest 10–15 minutes at room temperature while you prepare the sauce; this helps the seasoning adhere and encourages even smoking.

    Smoke/wood-fire: Preheat smoker or wood-fired grill to 250–275°F (120–135°C). Use a mild fruitwood (peach, apple) or oak for 45–60 minutes until the wings reach an internal temperature of 165–170°F and skin is set and beginning to brown. Alternatively, if you don’t have a smoker, roast in a 425°F (220°C) oven on a wire rack for 30–35 minutes, turning once, until cooked through and crisping at the end.

    Optional finish for crispness: After smoking, increase heat (or transfer to a 425°F oven or hot grill) and cook 5–8 more minutes to crisp skin, watching closely to avoid burning.

Sweet & Spicy Peach & Garlic Sauce

    Prepare peaches: If using fresh, peel and chop enough peaches to make 1 cup. If using frozen, thaw and drain briefly. Place peaches in a blender or food processor and puree until smooth (about 30–45 seconds).

    Combine sauce base: In a small saucepan over medium heat, add the peach puree, 2 tablespoons granulated sugar, 1 tablespoon honey, 2 tablespoons apple cider vinegar, 1 tablespoon soy sauce, and 3 cloves minced garlic. Stir to combine.

    Season and simmer: Add 1/2 tsp red pepper flakes, 1/2 tsp smoked paprika, and 1/4 tsp salt. Bring the mixture to a gentle simmer, then reduce heat to low and simmer 6–8 minutes to concentrate flavors, stirring occasionally.

    Thicken the sauce: In a small cup combine 1 teaspoon cornstarch with 1 tablespoon cold water to make a slurry. Whisk the slurry into the simmering sauce and cook 1–2 minutes until it thickens slightly. Remove from heat and stir in 1 tablespoon unsalted butter and 1 teaspoon fresh lemon juice to add sheen and balance the sweetness.

    Taste and adjust: Taste the sauce and adjust seasoning — add more red pepper flakes for heat, more honey for sweetness, or a splash more vinegar for brightness. Keep warm until ready to toss with wings.

Tossing & Finishing

    Toss wings in sauce: Place the smoked and (optionally) crisped wings in a large mixing bowl. Pour the warm Sweet & Spicy Peach & Garlic Sauce over the wings—reserve about 2 tablespoons of sauce for serving if desired. Gently toss the wings until they are evenly coated, 1–2 minutes.

    Plate and garnish: Transfer the sauced wings to a serving platter. Immediately sprinkle with 2 tablespoons crumbled queso fresco and 1 tablespoon chopped fresh cilantro if using. Serve with lime wedges on the side for squeezing over the wings.

    Serve: Best served hot. Leftover wings can be refrigerated in an airtight container up to 2 days; reheat in a 375°F oven until warmed through and re-crisped.
