Preheat and prepare
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.

Toss bread cubes
In a large bowl, melt the unsalted butter and whisk in the olive oil. Add garlic powder, dried oregano, kosher salt, and black pepper. Add the bread cubes and toss thoroughly until evenly coated.

Bake
Spread the coated bread cubes in a single layer on the prepared baking sheet. Bake for 10–15 minutes, stirring once halfway through, until the croutons are golden brown and crisp. Remove from oven and let cool on the baking sheet. Croutons will crisp further as they cool.
Parmesan Caesar Dressing

Combine base ingredients
In a medium bowl or small food processor, combine mayonnaise, minced garlic, Dijon mustard, Worcestershire sauce, anchovy paste (or mashed anchovies), lemon juice, and white wine vinegar. Blend or whisk until smooth.

Add cheese and season
Whisk in the tablespoon of freshly grated Parmesan. While whisking, stream in the 2 tablespoons of olive oil to slightly loosen the dressing. Taste and season with kosher salt and freshly ground black pepper. If the dressing is too thick, whisk in up to 1 tablespoon cold water to reach desired consistency.

Adjust brightness
Taste for balance — add an extra 1/2 teaspoon lemon juice or a pinch more anchovy paste if you want more acidity or umami. Chill for 10 minutes if time allows to let flavors meld.
Salad Assembly

Prepare Romaine
Ensure romaine is thoroughly washed and completely dry (use a salad spinner or pat with towels). Tear into bite-size pieces and place into a large mixing bowl.

Dress the greens
Add about 3/4 of the prepared Parmesan Caesar dressing to the romaine (reserve some for guests who want extra). Using tongs, gently toss the lettuce until evenly coated but not drenched. Start with less dressing and add more to taste.

Add cheese and croutons
Sprinkle in 3/4 cup of the freshly grated Parmesan and add about 1 to 1 1/2 cups of the house-made croutons. Gently toss once more to combine.

Plate and finish
Divide the dressed salad among 4 plates or serve family-style. Finish each portion with a sprinkle of the remaining Parmesan (about 1/4 cup), a crack of fresh black pepper, and optional anchovy fillets arranged on top if using. Serve immediately so croutons remain crisp.
