Preheat and prepare dough
Preheat oven to 500°F (260°C) with a pizza stone or an inverted baking sheet on the middle rack. Lightly flour a work surface and stretch or roll the pizza dough into a 12-inch round. Transfer dough to a piece of parchment paper for easier handling.

Make ricotta white base
In a small bowl, combine ricotta (3 oz), grated Parmesan (2 tbs), minced garlic (1 tsp), olive oil (1 tbs), salt (1 tsp) and black pepper (1 tsp). Mix until smooth. If mixture seems thick, add 1-2 tsp water or milk to loosen slightly. Spread an even layer (about 1/4-inch thick) of this ricotta mixture over the stretched dough, leaving a 1/2-inch border for the crust.

Cook bacon
Heat a large skillet over medium heat. Add bacon slices (6) and cook 6–8 minutes, turning occasionally, until crisped but not burnt. Transfer bacon to a paper towel-lined plate to drain, then chop into 1/2-inch pieces. Reserve 1 tsp bacon fat in the skillet for the spinach step (discard excess or save for another use).

Wilt spinach
Return skillet to medium heat, melt butter (1 tbs) and add the fresh spinach (2 cups). Cook, tossing, until just wilted, about 1–2 minutes. Season with a pinch of salt and red pepper flakes (1/4 tsp) if using. Remove spinach to a bowl and squeeze gently to remove excess moisture; pat dry with paper towels if needed.

Par-bake
Using the parchment, transfer the assembled pizza to the preheated pizza stone or baking sheet. Bake for 6 minutes to set crust and melt cheese — this is a par-bake to make space for the eggs without overcooking them.

Add eggs and finish baking
Remove pizza from oven. Create three shallow wells in the toppings with the back of a spoon. Carefully crack one egg into each well. Return pizza to the oven and bake 5–7 minutes for over-medium yolks (cook time will vary with oven and egg size). Watch closely: 5 minutes will yield slightly runny yolks, 7 minutes firmer but still over-medium. If you prefer firmer yolks, bake up to 8–10 minutes.

Rest and garnish
When eggs are cooked to desired doneness, remove pizza from oven and let rest 2 minutes. Sprinkle chopped fresh chives or parsley (1 tbs) and an additional pinch of black pepper if desired. Slice into 6 slices and serve immediately.
