Prep and cut
Preheat oven to 425°F (220°C). Wash and scrub the yams well; leave the skin on for texture. Cut each yam in half lengthwise, then into 1/3- to 1/2-inch thick fries so pieces are uniform for even cooking. Place cut fries in a large bowl of cold water and soak for 20 minutes to remove excess starch.

Dry and coat
Drain the fries and pat completely dry with a clean kitchen towel or paper towels. In a large bowl, toss the dried fries with cornstarch until lightly and evenly coated. Add vegetable oil and toss to coat. Sprinkle smoked paprika, garlic powder, salt, and black pepper over the fries and toss again to distribute seasoning.

Arrange and roast
Line two sheet pans with parchment paper or lightly oil them. Spread the fries in a single layer, not overcrowding (use two pans if needed). Roast on the top and middle racks for 20 minutes, then rotate pans between racks and flip fries. Continue roasting another 10–15 minutes until edges are brown and fries are tender when pierced with a fork. Total roasting time ~30–35 minutes depending on thickness and oven. For extra crispness, broil 1–2 minutes at the end while watching closely.

Toast walnuts and finish
While fries roast, toast 1 cup chopped walnuts in a dry skillet over medium heat for 3–5 minutes, shaking the pan frequently until fragrant and lightly browned. Remove from heat and cool. When fries are done, immediately transfer to a large bowl or platter, sprinkle toasted chopped walnuts and thinly sliced scallions evenly over the hot fries, and toss gently to combine. Sprinkle chopped parsley if using. Taste and adjust salt if needed, then serve hot with the dipping sauce.
Walnut Honey-Mayo Dipping Sauce

In a small bowl, whisk together mayonnaise, honey, Dijon mustard, apple cider vinegar, and lemon juice until smooth. Stir in finely chopped toasted walnut pieces and hot sauce if using. Season with the small amounts of salt and black pepper, taste and adjust sweetness, acidity or seasoning as desired. Refrigerate at least 15 minutes to let flavors meld (can be made up to 2 days ahead). Serve chilled or at room temperature alongside the fries.
