Dumpling filling (choose one)

If using chicken: place 1 cup ground chicken in a medium bowl. If using tofu: press to remove excess moisture, then crumble finely to measure 1 cup.

Add 1 cup finely shredded Napa cabbage to the protein. If the cabbage is very wet, sprinkle with a pinch of salt, let sit 5 minutes, then squeeze out excess moisture before adding.

Mix in 3 tablespoons thinly sliced scallions, 1 teaspoon minced ginger, and 1 teaspoon minced garlic until evenly distributed.

Add 1 tablespoon soy sauce, 1 teaspoon sesame oil, 1 tablespoon rice wine (or dry sherry), 1 teaspoon salt, 1 teaspoon freshly ground black pepper, and optional 1/4 teaspoon chili flakes. Stir thoroughly until the mixture becomes slightly sticky and well combined. Taste a small amount (if using tofu, ensure seasoning; if using chicken, cook a tiny pinch in a skillet to test seasoning).

Lightly dust a work surface with 2 tablespoons flour to prevent sticking. Place dumpling wrappers on the surface in a single layer, covered with a damp towel to prevent drying.

Spoon about 1 rounded teaspoon of filling into the center of a wrapper (adjust to fit; avoid overfilling).

Dip your fingertip into the 1/4 cup cold water and moisten the edge of the wrapper all the way around.

Fold the wrapper in half over the filling to form a half-moon. Press the center to seal, then create 3–4 small pleats along one side, pressing each pleat firmly to the opposite edge to form traditional potsticker pleats. Ensure there are no air pockets. Repeat until all filling is used (should make about 30–36 potstickers). Keep finished potstickers covered with a damp towel.

Heat a large nonstick or cast-iron skillet over medium-high heat. Add 2 tablespoons neutral oil and swirl to coat the bottom.

Arrange potstickers in the skillet in a single layer, flat side down, without overcrowding (work in batches if needed). Brown for 2–3 minutes, until the bottoms are golden-brown and crisp.

Remove the lid and increase heat to medium-high for 30–60 seconds to re-crisp the bottoms and evaporate any remaining moisture. Use a spatula to transfer potstickers to a serving plate.
Thai sweet chili dipping sauce

In a small bowl, combine 3/4 cup store-bought Thai sweet chili sauce with 1 tablespoon fresh lime juice. Stir until combined.

Taste and adjust: add more lime juice for acidity or a pinch of chili flakes for heat if desired. Sprinkle chopped cilantro on top as an optional garnish.
