    Prep vegetables

    Dice the onion, carrots, and sweet peppers into approximately 1/4-inch pieces so they soften evenly. Mince the garlic and measure spices and liquids.

    Sauté aromatics and vegetables

    Heat a large heavy-bottom pot or Dutch oven over medium heat. Add the olive oil and when shimmering, add the diced onion and a pinch of salt. Cook 4–5 minutes until translucent. Add the carrots and peppers and continue to cook 5–7 minutes until they begin to soften. Stir frequently to prevent sticking.

    Add garlic and spices

    Push the vegetables to the side, add the minced garlic and cook 30 seconds until fragrant. Add the cumin, chili powder, smoked paprika, and oregano, stirring constantly for about 30–45 seconds to bloom the spices. If using chipotle, add it now and stir.

    Tomato base

    Stir in the tomato paste and cook 1–2 minutes, mashing it into the vegetables so it darkens slightly (this removes the raw tomato flavor). Add the crushed tomatoes and stir to combine.

    Simmer with broth and beans

    Pour in the vegetable broth, add the drained kidney beans and garbanzo beans, and bring the pot to a gentle simmer. Reduce heat to maintain a low simmer, partially cover, and cook 20–25 minutes so flavors meld and vegetables soften fully.

    Add corn and balance flavors

    Stir in the corn and continue to simmer uncovered for 5–7 minutes. Taste and add the brown sugar or maple syrup, apple cider vinegar or lime juice, salt, and black pepper. Adjust seasoning: more salt, heat, or sweetness as needed.

    Finish

    If the chili is thicker than desired, add up to 1/2 cup more vegetable broth and simmer 2–3 minutes. For a deeper flavor, simmer longer on low, stirring occasionally. Remove from heat once vegetables are tender and flavors are balanced.

Finishes & Garnishes

    Ladle the chili into a large serving bowl. Stir in chopped cilantro if using, or sprinkle it on top along with sliced green onions.

    Offer optional garnishes on the side: a dollop of sour cream or yogurt, shredded cheese, and tortilla chips or toasted bread for scooping.

    Serve hot. Leftovers keep well refrigerated up to 4 days and often taste better the next day as flavors continue to develop. Reheat gently on the stove or in a microwave, adding a splash of broth if needed.
