Lamb Patties

    Mix

    Combine ground lamb, breadcrumbs, egg yolk, minced garlic, finely minced red onion, chopped parsley, ground cumin, smoked paprika, kosher salt, and black pepper in a bowl. Mix gently with your hands or a fork until ingredients are evenly distributed but do not overwork — about 20–30 seconds.

    Form patty

    Portion the seasoned lamb into a single slider-sized patty (about 2.5–3 oz / roughly 1/8 lb). Shape into a round 2.5–3 inch patty about 1/2 inch thick, making a slight dimple in the center so it cooks evenly.

    Sear

    Heat a skillet (cast iron preferred) over medium-high heat until hot. Add 1 tsp olive oil and swirl to coat. Place the patty in the pan and sear without moving for 2½–3 minutes until a deep brown crust forms. Flip and cook 2–3 more minutes for medium (adjust time +/- 1 minute for desired doneness). Remove to a plate and let rest 2 minutes.

Grilled Cabbage

    While the patty rests, heat a second skillet or grill pan over medium-high heat. Brush both sides of the cabbage wedge with 1/2 tsp olive oil and season lightly with 1/16 tsp kosher salt and a pinch of black pepper. Place the wedge cut-side down and cook 3–4 minutes until char marks appear and it softens slightly. Flip and cook 2 more minutes. Remove and reserve a small slice to fit the slider if needed.

Chimichurri Aioli

    In a small bowl combine 1 tbsp mayonnaise, 1 tsp chopped parsley, 1/2 tsp chopped cilantro, 1/8 tsp minced garlic, 1/4 tsp red wine vinegar, 1/2 tsp olive oil, 1/8 tsp lemon juice, a pinch (about 1/32 tsp) red pepper flakes, and a small pinch (about 1/32 tsp) kosher salt. Stir until homogenous and taste; adjust acidity or salt as needed. Keep chilled until assembly.

Slider Assembly

    Toast: Heat a small skillet over medium-low. Lightly butter the cut sides of the brioche slider bun (use about 1/2 tsp butter) and toast cut-side down until golden, about 1–2 minutes.

    Assemble: Spread about 1 tsp of the chimichurri aioli on the bottom bun. Place the rested lamb patty on top of the aioli. Add the grilled cabbage slice (trim to fit if necessary) on the patty. Top the cabbage with microgreens or a small lettuce leaf if using. Spread a light smear (about 1/2 tsp) of chimichurri aioli on the top bun and close the slider.

    Serve: Serve immediately while warm. Recommended: provide a toothpick to hold the slider together. One slider portion is priced per single serving.
