    Prep the brisket

    Pat the brisket dry with paper towels. Combine kosher salt, black pepper, paprika, brown sugar, garlic powder and onion powder in a small bowl and rub evenly over both sides of the brisket.

    Sear and braise

    Heat 1 tablespoon vegetable oil in a medium ovenproof skillet or Dutch oven over medium-high heat until shimmering. Sear brisket 2–3 minutes per side until browned. Add 1/4 cup beef or chicken broth to the pan, reduce heat to low so liquid simmers gently. Cover with a tight-fitting lid or foil and transfer to an oven preheated to 325°F (160°C).

    Slow-cook

    Cook in the oven for 1 hour 15 minutes to 1 hour 30 minutes, or until the brisket is fork-tender but still moist (time depends on thickness). Check once at 45 minutes and add a splash more broth if the pan looks dry.

    Finish with BBQ sauce

    Remove brisket from oven and let rest, covered, for 10 minutes. Slice against the grain into child-friendly strips. Brush both sides lightly with 2 tablespoons mild BBQ sauce before plating.

Fries

    Cook fries according to package instructions for oven-baking or shallow frying. For oven method: preheat oven to package temperature (usually 425°F/220°C). Toss frozen fries with 1 tablespoon vegetable oil and spread in a single layer on a baking sheet. Bake 12–18 minutes, flipping once halfway, until golden and crisp. Season immediately with 1/4 teaspoon fine sea salt. For shallow-fry method: heat 1/2 inch oil in a skillet to 350°F/175°C and fry fries in batches 3–5 minutes until golden; drain on paper towels and season with salt.

Garnish & serving

    Plate the sliced brisket with a small pile of fries and a dill pickle spear. Serve with 1 tablespoon extra BBQ sauce on the side for dipping. Ensure portions have cooled slightly before giving to a child.
