Preheat and prep
Preheat the oven to 300°F (150°C). Remove the membrane from the back of the baby back ribs if present: slide a small knife under the membrane at one end, loosen it, then grab with a paper towel and pull it off.

Make rub
In a small bowl combine kosher salt, black pepper, paprika, garlic powder, and brown sugar. Rub the mixture evenly over both sides of the ribs.

Set up for moist cooking
Place the ribs meat-side up on a large piece of aluminum foil big enough to wrap them. Combine apple cider vinegar and water and brush or pour a little (about half of the mixture) over the ribs to help keep them moist. Dot the top with small pieces of butter.

Wrap and bake
Tightly wrap the ribs in the foil, sealing the edges so steam stays inside. Place on a rimmed baking sheet and bake in the preheated oven for 2 hours.

Sauce and finish
Carefully unwrap the ribs (watch for hot steam). Brush the exposed top with half of the BBQ sauce, then return to the oven, uncovered, set to 425°F (220°C) or use the oven broil setting on low. Bake or broil for 10-12 minutes until the sauce is tacky and slightly caramelized. Remove and brush with remaining BBQ sauce. Let rest 5 minutes. Slice into kid-size portions (about 3-4 ribs per plate).

Prep potatoes
While the ribs bake, wash and peel (optional) the potatoes. Cut into 1/4- to 1/2-inch sticks for fries. Rinse in cold water until water runs clear to remove excess starch, then pat completely dry with a clean towel.

Fry
Heat vegetable oil in a heavy skillet or pot to 350°F (175°C). If you don't have a thermometer, test with one piece of potato — it should sizzle steadily. Fry potatoes in batches (do not crowd) for 3-5 minutes until golden and cooked through. Use a slotted spoon to transfer fries to a paper-towel-lined tray.

Season
Immediately season fries with kosher salt and optional paprika while still hot. Keep fries warm in a low oven (200°F/95°C) on a baking sheet if needed until ribs are ready.

Plate the kid's BBQ babyback rib plate by placing the sliced ribs on the plate, add a serving of fries beside them, and place one dill pickle spear on the plate. Sprinkle a little chopped fresh parsley over the fries or ribs if using. Serve warm.
