Apple Juice (Fresh-Pressed, Organic)

Method

Apple Juice (Fresh-Pressed, Organic)

  1. 1

    Wash and prepare

Rinse the apples thoroughly under cold water to remove any residue. Core the apples and cut into pieces large enough to fit your juicer or blender. Peeling is optional; leaving skins on preserves nutrients and color.

  2. 2

    Juice or blend

If using a juicer: feed apple pieces through the juicer until all are processed. If using a blender: place apple pieces and up to 1 cup cold water in the blender; blend on high until smooth.

  3. 3

    Strain (if blended)

If you used a blender and prefer a clear juice, pour the blended apple through a fine-mesh sieve or nut milk bag into a pitcher, pressing to extract as much liquid as possible.

  4. 4

    Finish and serve

Stir in 1 tablespoon fresh lemon juice to brighten the flavor. Taste and add up to 1/4 cup additional water if too thick. Serve over ice if desired. Refrigerate leftovers in a sealed container for up to 48 hours; shake before serving.

Fresh Orange Juice (Squeezed)

  1. 5

    Prepare oranges

Roll each orange on the counter under your palm to loosen juices. Cut oranges in half crosswise.

  2. 6

    Juice

Use a citrus juicer (manual or electric) to extract juice from each half into a bowl or pitcher. If some pulp collects and you prefer less pulp, pour the juice through a fine sieve into a serving pitcher.

  3. 7

    Adjust and serve

If the juice is very strong, add up to 1/4 cup cold water to thin slightly. Chill or pour over ice and serve immediately. Store in the refrigerator and consume within 24 hours for best flavor.

Cranberry Juice (Fresh-Style)

  1. 8

    Cook cranberries

Place 2 cups cranberries and 2 cups water in a medium saucepan. Bring to a simmer over medium heat, then reduce heat and cook, stirring occasionally, until cranberries burst and soften, about 8–10 minutes.

  2. 9

    Sweeten and blend

Remove from heat. Add 3 teaspoons sugar or honey (adjust to taste) and 1 tablespoon fresh lemon juice. Let mixture cool slightly, then transfer to a blender and puree until smooth. If you prefer, mash with a potato masher instead of blending.

  3. 10

    Strain and chill

Pour the puree through a fine-mesh sieve or cheesecloth into a pitcher, pressing to extract as much liquid as possible. Taste and adjust sweetener if needed. Chill and serve over ice. Keeps refrigerated for up to 3 days.

Grapefruit Juice (Fresh-Squeezed)

  1. 11

    Prepare grapefruit

Roll each grapefruit on the counter to loosen juices and cut in half crosswise. If you dislike bitterness from the skin, use a grapefruit variety labeled 'sweet' or remove bits of pith.

  2. 12

    Juice

Juice each half using a citrus press into a bowl or pitcher. Taste and, if desired, stir in 1 teaspoon sweetener (sugar, honey, or agave) to balance acidity. If too concentrated, add up to 1/4 cup cold water to thin.

  3. 13

    Serve

Chill or serve over ice immediately. Store in the refrigerator and consume within 24 hours for best flavor.
