Tortillas & Beans

Warm a large skillet over medium heat and add 1 tablespoon olive oil. Add the chopped onion and cook until translucent, about 3 minutes.

Add minced garlic and cook 30 seconds until fragrant. Stir in drained black beans, ground cumin, salt, and pepper. Cook, mashing slightly with the back of a spoon, until beans are heated through and slightly thickened, about 4–5 minutes.

Finish beans with 1 tablespoon lime juice, stir to combine, then keep warm on very low heat or transfer to a small covered pan.

Heat a separate dry skillet over medium-high. Warm each corn tortilla 30–45 seconds per side until pliable and lightly charred in spots. Stack tortillas and wrap in a clean towel to keep warm (2 tortillas per serving stacked).
Chile Sauce (choose red or green)

In a small saucepan heat 1 teaspoon olive oil over medium. Add 2 tablespoons of the finely chopped onion and cook until softened, about 2 minutes.

Add 1 teaspoon minced garlic and cook 30 seconds. Pour in 1 cup of your chosen chile sauce (red tomato-based or roasted green chile salsa) and 1/4 cup stock, stirring to combine.

Bring to a gentle simmer, reduce heat and simmer 3–5 minutes to meld flavors. Taste and season with 1/2 teaspoon salt or more to preference. Keep sauce warm until plating.

To assemble each plate: place two warmed tortillas stacked on the plate. Spoon half the black beans onto the stacked tortillas, spreading to cover.

Sprinkle 1/4 cup shredded jack cheese over the hot sauce immediately so it melts. If desired, place under a broiler for 30–60 seconds to finish melting (optional).
Garnish & Serve

Finish with chopped cilantro, a dollop of sour cream or crema, and pickled or fresh jalapeño slices. Serve with lime wedges on the side to squeeze over before eating.

Serve immediately while eggs are warm and yolks are runny. Leftovers: keep components separate and reheat gently; assembly is best fresh.
