    Prep bread and fillings

    Spread about 1/2 teaspoon mayonnaise on the inside of four slices of bread (optional for extra browning and tang). On the opposite four slices, spread a very thin layer (about 1/8 teaspoon) of Dijon mustard if using. Arrange 2 slices sharp cheddar on four bread slices, top with one slice Monterey Jack or Swiss on two of those to vary the melt, then add optional tomato slices or bacon if desired. Top each with remaining bread, mayo/mustard sides inward.

    Butter the outsides

    Evenly spread about 3/4 tablespoon (roughly 3/4 tbs) of softened butter on the outside of each sandwich slice (both top and bottom) so each sandwich has about 1 1/2 tablespoons butter total. This creates an even golden crust.

    Cook the sandwiches

    Heat a heavy skillet or cast-iron pan over medium-low to medium heat (about 325–350°F / 160–175°C). Place two sandwiches in the pan without crowding. Cook 3–4 minutes on the first side until golden brown and the cheese begins to melt. Press gently with a spatula or a second pan to ensure even contact. Flip and cook the other side 3–4 minutes until golden and cheese is fully melted. If bread is browning too fast before cheese melts, lower heat and cover pan for 1–2 minutes to trap heat. Remove sandwiches to a cutting board and let rest 1 minute before slicing in half on the diagonal.

    Prepare potatoes

    Wash and peel potatoes if you prefer (skins on is fine). Cut each potato into even 1/3-inch (8 mm) thick sticks. Place cut fries in a large bowl of cold water and soak 15–30 minutes to remove excess starch for crispier fries. Drain and pat completely dry with clean kitchen towels or paper towels.

    Preheat oven to 425°F (220°C). Toss dried fries with 2–3 tablespoons of the oil and the salt, pepper, and paprika until evenly coated. Spread in a single layer on a baking sheet lined with parchment (do not overcrowd). Bake 20 minutes, flip fries, then bake an additional 10–15 minutes until golden and crisp. For extra crispness, broil 1–2 minutes at the end while watching closely. Remove and adjust seasoning to taste.

    Cook fries — shallow-fry method (faster/crispier)

    Heat 1/2 to 1 cup vegetable oil in a heavy skillet over medium-high heat until shimmering (around 350°F / 175°C). Fry fries in batches 4–6 minutes per batch until deep golden, turning occasionally. Transfer to a paper towel–lined tray and season immediately with salt, pepper, and paprika.

Pickle & Condiments

    Plate four dill pickle spears alongside each sandwich. Serve ketchup and mustard in small ramekins for dipping fries and sandwiches as desired.
